We did our full row of red beets yesterday. The variety we have grown for a few years are Merlin, a nice Detroit style, 55 days maturity.
Ended up with about a 5 gal pail of beets,

Which with some vinegar, sugar, water and some spices, ended up with 9 1 Litre jars of pickled beets. Now we won't starve this winter!!!
