School me on hydraulics....

So my 3rd winch on my Sears front blade / bucket screwed up again( I think it's a solenoid). I think I have decided to switch over to a hydraulic cylinder system. I have 2 different GM power steering pumps, one with reservoir on pump, the newer style has separate tank but I have to find a v belt pulley for it and also a fitting to fit the pump to hydraulic hose. I think either will work for just my bucket. I also plan to make a hydro rear 3 pt lift.Thats where the valves below come into play.

So I guess my questions are since I'm Hydraulics stupid....
*What size hoses and fittings should I use?
*These valves are off a MF1655, what ports go where?
* Can I add quick disconnects to cylinders in case I need to remove them from system?

Those are nice valves, Alice is sporting a set of those. As the pic is, the fitting on the far left is 'in'. Far right is 'out'. The one valve with fittings, closest to handle end is down, other is up. That also has float! Other valve is plugged.

I use the small HF winch on a GT fro lifting the sleeve hitch. Also have one on the big trailer which is outside all the time. About 4 years old now and not an issue yet.
